Espirales con tomate / Pasta with tomato

A quien no le apetece de vez en cuando un buen plato de pasta... La pasta sin gluten es un poco más difícil de acertar. Los que las habéis probado ya me entendéis. Yo después de probar muchas marcas, por no decir TODAS las que he encontrado, os recomiendo Pandea. Puede ser que el hecho de ser una marca italiana, cuna de la pasta, tenga algo que ver. Aparte de esta hay muchas otras que tengo en la despensa, ya os iré enseñando mi preferidas. De momento empiezo con esta receta de Fusili con champiñones y tomate, ideal para preparar en casa o fuera de casa, por ejemplo, de camping! :) 



INGREDIENTES: (para 2 personas)

200 gr de pasta Fusili PANDEA
50 gr de champiñones 
Bote de salsa de tomate*
Orégano*
Olivas negras sin hueso*
Aceite de oliva
Nueces

*Verificar las marcas para asegurarse que es SIN GLUTEN.

PREPARACIÓN:

- Poner una olla con agua al fuego. Cuando empiece a hervir echar la pasta, remover y dejar cocer el tiempo de cocción indicado en el envase. Normalmente yo suelo dejarla par de minutos más de lo que indican para asegurarme que no queda dura por dentro.

- Limpiar y laminar los champiñones. En una sartén echar los champiñones y ir removiendo hasta que suelten el agua y se evapore. Entonces añadir un par de cucharadas soperas de aceite y dejar rehogar unos 4-5 minutos. Reservar.

- Cuando la pasta esté lista escurrir, añadir los champiñones y remover. Servir en el bol y añadir la salsa de tomate al gusto, unas olivas negras cortadas a rodajas finas y unas 2 o 3 nueces troceadas. Espolvorear con el orégano. Como la salsa de tomate y las olivas ya llevan sal yo ya no le añado más. Pero si hacéis salsa de tomate casera  podéis añadir una pizca de sal, a gusto.

Who doesn't like pasta? And what happens with gluten free pasta? Everybody that had taste it knows what I mean. But if you try all brandsyou find in markets you will find one that will taste almost like the "normal one".  I said almost. For me this happens with PANDEA's pasta. It's an Italian brand, that could be a reason they have a good gluten free pasta.





Apart from this kind of pasta there are other delicious _ varieties that I have in the pantry. I will show you all my favorite. For now I start with this recipe of pasta with mushrooms and tomato, ideal to prepare at home or away from home, for example, in a campingweekend! :)

INGREDIENTS: (for 2 people)

200 gr pasta Fusili PANDEA
50 grams of  mushrooms
Tomato sauce *
Oregano *
Pitted black olives *
Olive oil
Nuts

* Check the brands to ensure it is GLUTEN FREE.

PREPARATION:

- Put a pot with water on the fire. When the water starts to boil pour the pasta, stir and simmer the cooking  the time indicated on the package. Normally I usually leave two or three minutes more to make sure it is not hard on the inside.

- Clean the mushrooms and cut in slices. In a pan pour the mushrooms and stir until they release the water and evaporates. Then add a couple of tablespoons of oil and let cook about 4-5 minutes more. Reserve.

- When the pasta is wring, add the mushrooms and stir. Serve in bowl and add the tomato sauce, some black olives cutted in slices and about 2 or 3 chopped nuts. Sprinkle with the oregano. As the tomato sauce and olives are salted I don't add salt. But if you make a homemade tomato sauce you can add a pinch of salt, to taste. Enjoy it!

Arroz con leche (sin lactosa) / Rice with lactose free milk

Pensando en un postre sencillo, rápido, tradicional y rico se me ocurrió probar a elaborar un arroz con leche. Si, si, el de toda la vida pero en la versión SIN LACTOSA para poder disfrutar todos en casa.

Solamente necesitamos sustituir la leche de vaca por su versión sin lactosa o, mejor aún, por alguna leche vegetal que al tener un toque dulce nos va a dar un sabor muy bueno al hervirse con el arroz. Atención a la preparación...

INGREDIENTES:

200gr arroz blanco
250 ml leche de arroz (o de almendras)
100 ml agua
2 dátiles grandes
1 rama de canela


PREPARACIÓN:

- Poner el arroz en una cazuela a hervir con el agua , la leche de arroz , los dátiles troceados y la ramita de canela. Dejar entre 15 y 20 minutos hasta que se haya reducido el líquido. Si vemos que se queda sin líquido antes de tiempo podemos agregar algo más de leche de arroz. Ir removiendo de vez en cuando para evitar que se pegue.

- Apagar el fuego, retirar la rama de canela y servir en boles individuales. Dejar templar o enfríar y servir. Puede espolvorearse con un poquito de canela en polvo (de una marca sin gluten) y añadirse una cucharadita de miel si se quiere más dulce.

I was thinking about a easy, quick and tradicional dessert, and it appears in my mother suggest me the "rice with milk". I decide it could be a good choise and it would be easy to adapt in a gluten annd lactose free version. Also sugar free because the rice milk is sweet and gives to the rice a good flavour. Just take attention to the following steps...



INGREDIENTS:

- 200 gr withe rice
- 250 ml rice milk (or almond milk)
- 150 ml water
- 2 chopped dattes
- 1 cinnamon stick


PREPARATION:

- Put the rice in a pot with boil water, rice milk, dattes and cinnamon stick. Allow 15 to 20 minutes until the liquid is reduced. If you see that liquid runs out before you can add some more rice milk. Stir occasionally to prevent sticking.

- Turn off the heat, take out the cinnamon stick and serve in individual bowls. Allow to warm or cool and serve. Can be sprinkled with a little cinnamon powder (a brand guaranted gluten free) and added a teaspoon of honey if you like it sweeter.

Tortilla de patatas / Potato omelette

Todo un clásico. Ya sea para amenizar una cena entre amigos o con la familia. La tortilla de patatas gusta a grandes y pequeños, además se prepara con ingredientes muy sencillos, económicos y está deliciosa! 

Aquí os presento la receta original que admite infinidad de variantes (con chorizo, sin cebolla, con verduras, etc). 


INGREDIENTES:

4 huevos
5-6 patatas medianas (500gr. aproximadamente)
1 cebolla mediana 
aceite de oliva 
sal (a gusto)


PREPARACIÓN:
- Pelar las patatas y cortar en trocitos finos. Pelar la cebolla y trocear también en pequeños trozos.

- En una sartén echar abundante aceite (para freír) y cuando esté bien caliente echar las patatas. A los pocos minutos echar la cebolla junto con la patata y freír todo a fuego medio hasta que las patatas estén un poco doraditas. Sacar de la sartén y reservar.
- Batir los huevos y salzonar al gusto. Añadir las patatas al huevo batido y mezclar bien.
- Calentar de nuevo la sartén con un par de cucharadas de aceite y cuando esté caliente verter la mezcla anterior bajar el fuego al mínimo. Dejar cuajar el huevo unos minutos y dar la vuelta con una tapadera grande o plato y volver a echar a la sartén para que se haga por el otro lado. Cuando esté lista poner en un plato y ya tenéis la tortilla lista para servir.

A classic in a dinner with friends or family. The potato omelette like everybody,  it's prepared with simple and economic ingredients, and the result is delicious!
Here I present the original basic recipe tha admits infinite variations (with chorizo, without onion, with vegetables, etc). Just try it and find your favourite one.

INGREDIENTS:

4 eggs
5-6 medium potatoes ( 500 gr.)
1 medium onion
olive oil
salt 

PREPARATION:

- Peel the potatoes and cut into fine pieces. Peel the onion and chop into small pieces also. Reserve.

- In a pan put plenty of oil (for frying) and when hot pour the potatoes and stir. After a few minutes add the onion with the potato and fry over medium heat until all the potatoes are slightly browned. Remove from pan and reserve.

- Beat the eggs and salzonar to taste. Add the potatoes to the beaten egg and mix well.

- Heat the pan again with a couple of tablespoons of oil and when hot pour the mixture and reduce heat to a minimum. In a couple of minutes turn around with a cover or large plate and throw back to the pan to make the other side. When ready to put on a plate and you have the omelette ready to serve.

Tortitas de patata con miel y nueces / Potato pancakes with honey and nuts

La miel. Ese delicioso tesoro natural y lleno de virtudes que las diminutas y trabajadoras abejas nos permiten disfrutar. Hoy preparamos unas deliciosas tortitas con miel y frutos secos. Como siempre sin gluten, sin lactosa y ¡riquísimas! ¿Te atreves a probar?


INGREDIENTES:
- 500gr de patatas
- 40 ml de aceite de oliva
- 200 gr harina sin gluten
- 100 gr almendra molidas
- 1 sobre de levadura
- 50 gr de nueces peladas y troceadas
- 50 ml de miel líquida
- 1 vaina de vainilla


PREPARACIÓN:
- Primero se cuecen las patatas con la piel en agua con sal. Aproximadamente 3o minutos. Se escurren, se pelan y se aplastan con un tenedor en caliente. Se mezclan con el aceite.

- En otro bol se echa la harina, la almendra, la levadura, la vainilla y la miel y se mezcla bien. Luego se añade la patata de la mezcla anterior con las nueces y se vuelve a mezclar todo.

- Se forman tortitas planas y se colocan sobre una bandeja de horno engrasada. Hornear durante 40-45 minutos a 170ºC. Es importante dar la vuelta a media cocción para que se doren por los dos lados.

- En el momento de servir se rocían con con miel y nueces.

INGREDIENTS:
- 500g of potatoes
- 40 ml of olive oil
- 200 gr flour without gluten
- 100g ground almonds
- 1 envelope of yeast
- 50 gr of peeled and chopped walnuts
- 50 ml of liquid honey
- 1 vanilla bean


PREPARATION:
- First you cook the potatoes with skin in salted water. Approximately 3o minutes. Drained, peeled and crushed with a fork. Then mix them with the oil.

- In another bowl, mix the flour, almonds, baking powder, vanilla and honey. Then add the potato mixture with nuts and remixed everything.

- Form flat patties and place on a greased oven sheet. Bake for 40-45 minutes at 170 ° C. It is important to turn halfway through cooking to brown on both sides.

- At the time of serving drizzled with honey and nuts.
