Arroz con bacalao y verduras / Rice with cod and vegetables

Una receta de mamá que vale la pena compartir por lo nutritiva y rica que está. Los celíacos tenemos más que asumido que el arroz es nuestro cereal por excelencia, aparte del dichoso maíz que encontramos en todos los productos envasados, así que nada mejor que ir apuntando variantes para sorprender y sorprendernos cada día de la mesa. Dicen que "en la variedad está el gusto".

El bacalao salado es muy versátil y nos permite conservar el pescado el tiempo que necesitemos hasta su uso. Antes de cocinarlo necesita desalarse sumergiéndolo en agua durante unas 48 horas y cambiando el agua unas 2 o 3 veces al día, dependiendo de nuestras preferencias por el gusto salado y nuestra tensión. También puede prepararse esta receta con bacalao fresco.



INGREDIENTES: (3-4 personas)

-  3-4 tazas de arroz blanco
- Un lomo grande de bacalao desalado
- 2-3 alcachofas
- Medio manojo de ajos tiernos
- Medio manojo de espárragos
- Azafrán en rama
- 3-4 cucharadas soperas de aceite
- Sal (al gusto)

PREPARACIÓN:

- Pelar las alcachofas y cortarlas en medias lunas finas. Lavar los esparrágos, quitar la parte dura y cortar en trozos pequeños. Sofréir a fuego lento en una sartén con un poco de aceite durante 8-10 minutos.
Pelar los ajos tiernos y cortar en trozos como los espárragos y poner a fréir con el resto de verduras.

- Quitar la piel al bacalao y cortar en dados de tamaño mediano. Añadir junto con las verduras e ir removiendo todo dejando que se rehogue  el bacalao. Unos 5 minutos. Salzonar a gusto y añadir unas hebras de azafran en rama. Sacar del fuego y reservar en la misma sartén.

- En una cazuela aparte calentar agua y cuando empiece a hervir echar el arroz y dejar cocer durante 12 minutos. Pasado este tiempo verter en la sartén con el bacalao y las verduras y remover. Dejar que siga hirviendo unos 5  minutos más. Se puede añadir un poco más de agua si fuera necesario.

- Apagar el fuego, dejar reposar un par de minutos y listo para servir.

Salted codfish is a very versatile aliment and allows us to preserve the fish long time. Before cooking it needs to be desalted by immersing in water for 48 hours changing the water about 2 or 3 times a day, depending on our preferences for salty taste and our tension. You can also try this receipe with fresh cod.




INGREDIENTS: (3-4 people)

- 3-4 cups of white rice
- A large desalted cod loin
- 2-3 artichokes
- Half bunch of asparagus
- Saffron sticks
- 3-4 tablespoons tablespoons oil
- Salt (optional)

PREPARATION:

- Peel the artichokes and cut into thin half moons. Wash the asparagus, remove the hard part and cut into small pieces. Saute over low heat in a pan with a little oil for 8-10 minutes.

- Remove the cod skin and cut up into medium-small pieces. Add with the vegetables and cook all for about 5-7 minuts. Taste to salt if necessary and add a few strands of saffron sticks. Remove from the  heat and reserve in the same pan.

- In a separate saucepan heat water and when it starts boiling add the rice and cook for  about 12 minutes. After this time, pour the rice and water into the pan with the cod and the vegetables and stir. Let continue to boil for about 5-7 minutes. You can add a little more water if necessary.

- Turn off the heat and it is ready to serve.

Arroz con leche (sin lactosa) / Rice with lactose free milk

Pensando en un postre sencillo, rápido, tradicional y rico se me ocurrió probar a elaborar un arroz con leche. Si, si, el de toda la vida pero en la versión SIN LACTOSA para poder disfrutar todos en casa.

Solamente necesitamos sustituir la leche de vaca por su versión sin lactosa o, mejor aún, por alguna leche vegetal que al tener un toque dulce nos va a dar un sabor muy bueno al hervirse con el arroz. Atención a la preparación...

INGREDIENTES:

200gr arroz blanco
250 ml leche de arroz (o de almendras)
100 ml agua
2 dátiles grandes
1 rama de canela


PREPARACIÓN:

- Poner el arroz en una cazuela a hervir con el agua , la leche de arroz , los dátiles troceados y la ramita de canela. Dejar entre 15 y 20 minutos hasta que se haya reducido el líquido. Si vemos que se queda sin líquido antes de tiempo podemos agregar algo más de leche de arroz. Ir removiendo de vez en cuando para evitar que se pegue.

- Apagar el fuego, retirar la rama de canela y servir en boles individuales. Dejar templar o enfríar y servir. Puede espolvorearse con un poquito de canela en polvo (de una marca sin gluten) y añadirse una cucharadita de miel si se quiere más dulce.

I was thinking about a easy, quick and tradicional dessert, and it appears in my mother suggest me the "rice with milk". I decide it could be a good choise and it would be easy to adapt in a gluten annd lactose free version. Also sugar free because the rice milk is sweet and gives to the rice a good flavour. Just take attention to the following steps...



INGREDIENTS:

- 200 gr withe rice
- 250 ml rice milk (or almond milk)
- 150 ml water
- 2 chopped dattes
- 1 cinnamon stick


PREPARATION:

- Put the rice in a pot with boil water, rice milk, dattes and cinnamon stick. Allow 15 to 20 minutes until the liquid is reduced. If you see that liquid runs out before you can add some more rice milk. Stir occasionally to prevent sticking.

- Turn off the heat, take out the cinnamon stick and serve in individual bowls. Allow to warm or cool and serve. Can be sprinkled with a little cinnamon powder (a brand guaranted gluten free) and added a teaspoon of honey if you like it sweeter.
