Chocolate con churros / Chocolate with churros

(For English version please read below)

December and  aweekend morning could perfectly mean a hot chocolate for breakfast. And not alone, in Spain we use to eat with churros, a pasta prepared with a mix-flour (glutenfree) and water.

My family and friends know that I'm not a chocolate addict, but sometimes I like to enjoy a hot chocolate. This weekend, for example! ;)

Few time ago, someone bring me a special glutenfree flour to prepare churros, this weekend I start following the receipe and the result really surprise me. They were amazing!!

- 250 ml water
- Olive oil
- Sugar

- 80 gr chocolate to prepare hot chocolate (for 2 person)
-500 ml de milk or water (for 2 person)

PREPARATION:

For the hot chocolate:
1- Put the 40 gr of chocolate in a cup and add a part of the milk cold or room temperature. Mix well to disolve.

2- Put the rest of the milk in a pot and when starts boiling add the rest f the milk with the chocolate. Remove during a few minuts. Serve in the cups.

Bizcocho de chocolate / Chocolate cake

(For English version please read below)

A delicious snack or breakfast and, why not, if you decorated correctly as a birthday cake for the chocolate lovers...

For the dough you can use a gluten free mixture of flours, or as in my case I used 2 cups of rice flour and a cup of cornstarch. Once in the oven to see if the cake is ready tap with a stick and see that comes out clean. If not you have to leave for a few minutes more.

Alternatively you can cut the cake in half in the horitzontal way and add the jam to give a fruity touch. In that case you have to save the cake covered in the refrigerator.

INGREDIENTS:

- 3 eggs
- 1 plain yogurt
- 2 yogurt cups of cane sugar
- 3 yogurt cups of gluten free flour
- 1/2 yogurt cup of olive oil
- 1/2 sachet of baking powder
- 1 tablet of dark chocolate
- A few drops of anise or cognac
- Strawberry Jam, Apricot , ... (optional)
- Icing sugar (optional)

PREPARATION:

- In a bowl beat the eggs and the yogurt. Add the sugar, the flour and the baking powder and continue stirring until all ingredients are integrated.

- Grate half the chocolate as finely as possible. And add half to the mixture and reserve the rest. Add the oil, the anise or the cognac and beat again for about 5 minutes.

- Spread the dough in pan greased with oil and place in the oven on medium high for 35-40 minutes at about 170 ° C.

- Allow to cool. Melt the half remaining chocolate tablet and pour the mixture over the cake letting it cover the entire surface. Let cool to room temperature and finally pour the remaining chocolate chips. Sprinkle a couple of tablespoons of icing sugar. You are ready to enjoy!

Magdalenas con copeta/ Cupcakes

(For English version please read below)

INGREDIENTES: (12-15 magdalenas)

- 4 huevos
- 220 gr harina (110 gr arroz, 55 gr maíz, 55 gr garbanzo)

For a few weeks I start enjoying triying all the different kinds of gluten-free cupcakes that I found on shops. Spanish brands like Airos, Schär,  La cocina de Siena, etc). But someone because of the industry flavour, other ones because of the high price, I decide toprepare my own recipe gluten and lactose free.

The first try was a little disastrous, they result nice but not so tasty, The second time, with a little help to remove the mixture, I can say I have found a perfect recipe for cupcakes! I just need to change some detail like the sugar coating over the cupcake. But for the rest I think I will repeat this recipe that I share with you.

INGREDIENTS: (12-15 cupcakes )

- 4 eggs
- 220 gr flour ( 110 gr rice, corn 55 gr , 55 gr chickpeas )
- 90 gr brown sugar
- 150 ml extra virgin olive oil
- The juice of half an orange
- 1 packet of yeast
- A pinch of salt
- A pinch of xanthan gum (optional)
- White sugar for dusting

PREPARATION:

- Beat the eggs in a large bowl with the sugar, the orange juice and the oil.

- In a separate bowl mix well the flour with the baking powder, the xanthan gum and the salt. When its well mixed add to the other bowl and mix again all fine. Put the mix in a platic bag, close it and let the dough rest in the fridge for 30 minutes.

- Prepare cupcakes cups with paper sheets. Cut the corner of the lastic bag and fill the sheets with the mix -little more than half part, moreless 3/4 parts-.

- Place in a preheated oven at 170 ºC and leave for 12-15 minutes for small cupcakes and 20-25 minutes for large muffins.

- To preserve a few days I put the cupcakes in an airtight container, but I you need to preserve more time you can freeze them.

* I use several types of molds with a good result -in all I use paper sheets-:
1 - Large metal molds
2 - Small molds
3 - Aluminum molds
