Bizcocho de higos / Fig's cake

Hola de nuevo,

Hoy quiero compartir una deliciosa receta que además sirve para aprovechar las bandejas de higos que están tan ricas pero a que a veces se acumulan en la nevera....y como se maduran tan deprisa, es una pena que se estropeen.

Busqué por internet y en el blog de EL HADA DE LAS TARTAS encontré una receta MUY interesante. Pero con gluten.

No importa. Miré la despensa, calculé una mezcla de harinas que podría funcionar y tachán: versión Sin Gluten Deliciosa. En los ingredientes hay leche y yogur, se pueden sustituir fácilmente por leche sin lactosa o leche vegetal, y el yogur por yogur de soja  u otro que  quérais. Muy fácil de hacer y sorprende el resultado.



Ahí vamos,

INGREDIENTES:

- 120 gramos harina panificable
- 100 gramos harina de arroz
- 65 gramos maizena
- 1 cucharada de levadura química
- 1/4 de cucharadita de bicarbonato
- 1 pizca de sal
- 40 gramos de mantequilla
- 145 gramos de azúcar
- 1 huevo
- 120 ml de leche
- 1 yogur
- 10 higos frescos
- 1 vaina de vainilla
- Almendra laminada
- Azúcar para espolvorear

PREPARACIÓN:

- En un bol batir el azúcar y la mantequilla a temperatura ambiente. Yo usé mi robot de cocina...va perfecto! Añadir el huevo y seguir batiendo.

- En otro bol mezclar las harinas con el bicarbonato, la levadura y la sal. Y en un tercer bol poner la leche, el yogur, y la pulpa de la vainilla. Añadir la harina y la leche a la mezcla primera y batir bien hasta que quede homogéneo.
*La pulpa de la vainilla se saca cortando la vaina en longitudinal y con el dorso del cuchillo rascar con cuidado el interior. Veréis que es una pasta de color negro.

- Untar el molde elegido con aceite y verte la mezcla. Cortar cada higo en tres o cuatro trozos y añadir a la masa hundiéndolos un poco para que queden medio cubiertos.

- Espolvorear las almendras laminadas y un poco de azúcar al gusto.

- Hornear unos 40-45 minutos a 180 ºC.

Today I wanna share a delicious recipe which serves to use the figs that are accumulate in the fridge because they mature so quickly.....

I searched online and in the blog of EL HADA DE LAS TARTAS that means "the tarts's fairy" found an interesting recipe. But with gluten version of the cake.

Does not matter. I looked at the pantry, I calculate a mixture of flour that could be fine and work and here it is: A delicious Gluten Free version. If you dont want a milk or yogurt in the ingredients they can be easily replaced with lactose-free milk or vegetable milk, yogurt and soy yogurt or otherof your preference. Very easy to prepare and a surprising result.




Here we go,

INGREDIENTS:

- 120 grams bread flour
- 100 grams rice flour
- 65 grams cornstarch
- 1 tablespoon baking powder
- 1/4 teaspoon baking soda
- 1 pinch of salt
- 40 grams of butter
- 145 grams sugar
- 1 egg
- 120 ml of milk
- 1 yogurt
- 10 fresh figs
- 1 vanilla pod
- laminated almonds
- sugar for dusting

PREPARATION:

- In a bowl, beat the sugar and butter at room temperature. I used my food processor ... is perfect! Add the egg and continue beating.

- In another bowl mix flour with baking soda, baking powder and salt. And in a third bowl put the milk, yogurt, and the vanilla pulp. Add the flour and milk mixtures to the first bowl and beat well until smooth.
* The vanilla pulp is removed by cutting vanilla pod lengthwise and scrape with the back of the knife carefully inside. You will see that it is a paste of black color.

- Grease the pan with oil chosen and see the mix. Cut each fig into three or four pieces and add to the mass sinking a bit so they are half covered.

- Sprinkle sliced ​​almonds and a little sugar.

- Bake 40-45 minutes at 180 ° C. Enjoy.
