Chocolate con churros / Chocolate with churros

Para una fría mañana de fin de semana, nada mejor que una taza de chocolate caliente y como acompañamiento unos churros caseros, sin gluten por supuesto.

Los que me conocen saben que no soy una gran amante del chocolate, pero de vez en cuando también me apetece y este fin de semana me tocaba ración de chocolate. :)

Hace un tiempo me regalaron un paquete de harina especial para preparar churros, así que me puse a seguir la receta que indicaba y la verdad es que quedaron más buenos de lo que esperaba.



INGREDIENTES:

- 250 gr de harina mix-churros de Naturimprover
- 250 ml agua
- Aceite para freír
- Azúcar

- 80 gr chocolate a la taza sin gluten (para 2 personas)
-500 ml de leche sin lactosa o agua (para 2 personas)


PREPARACIÓN:

Para el chocolate:
1- Ponemos los 40 gr de chocolate en una taza y le añadimos un poco de leche fría o tibia. Remover hasta disolver el cacao vigilando que no queden grumos.

2- Calentar el resto de la leche en un cazo y cuando empiece a hervir añadir el la leche con el cacao disuelto. Remover durante unos minutos hasta que espese. Durante unos 4-5 minutos aproximadamente. Servir en las tazas.

Para los churros:
1- Mezclar el agua con la harina hasta obtener una masa homogénea.

2- Colocar la masa en la manga pastelera con la boquilla de estrella y dejar reposar la masa unos 15 minutos.

3- Poner a calentar al fuego una sartén grande con aceite para freír. Cuando el aceite esté bien caliente ir echando la masa en redondo y después cortarla o ir cortando los churros a medida que se ponen en el aceite.

4 - Ir dando la vuelta para que se doren por los dos lados y una vez estén hechos, sacar y escurrir en un papel de cocina. Espolvorear un poco de azúcar por encima.

5- Listos para servir! Y si os sobran churros, a mi me pasó, se pueden congelar y después solo hace falta calentar en la tostadora o en el horno.

December and  aweekend morning could perfectly mean a hot chocolate for breakfast. And not alone, in Spain we use to eat with churros, a pasta prepared with a mix-flour (glutenfree) and water.

My family and friends know that I'm not a chocolate addict, but sometimes I like to enjoy a hot chocolate. This weekend, for example! ;)

Few time ago, someone bring me a special glutenfree flour to prepare churros, this weekend I start following the receipe and the result really surprise me. They were amazing!!



INGREDINTS:

- 250 gr de mix-flour for churros Naturimprover
- 250 ml water
- Olive oil
- Sugar

- 80 gr chocolate to prepare hot chocolate (for 2 person)
-500 ml de milk or water (for 2 person)

PREPARATION:

For the hot chocolate:
1- Put the 40 gr of chocolate in a cup and add a part of the milk cold or room temperature. Mix well to disolve.

2- Put the rest of the milk in a pot and when starts boiling add the rest f the milk with the chocolate. Remove during a few minuts. Serve in the cups.

For the churros:
1- Mix well the water with the flour.

2- Put the mix into a pastry bag and reserve for aout 15 minuts.

3- Put a pan on the fire with il to fry. Whwn the oil is very hot start adding the churros cutting them in medium pieces.

4 - Turn them to toast on both sides. Take out and put in a kitchen paper to absorve the oil. Sprinkle sugar over the churros.

5- They are ready to serve! And if left some churros you can freeze them. The next day you eat them just put into the toast or the oven.

Tortitas caseras / Pancakes

Ante la dificultad de localizar el preparado para Pancakes me he decidido a probar varias recetas y mezclas de harinas hasta encontrar una que está riquísima. Aquí os la dejo, para que podáis preparar vuestra versión casera y deliciosa.

En mi caso lo suelo preparar solo para mi así que adapto la versión a 1 sola tortita si queréis dos solo hay que doblar los ingredientes, y entonces se puede echar un huevo entero. Con las harinas lo mejor que me ha funcionado es el mix C de Schär, pero probablemente la mezcla de harina de arroz y maizena también puede quedar bien.



Si os sobran tortitas las podéis recalentar en el microondas y quedaran como recién hechas.

INGREDIENTES: (para 1 pancake)

- 75 gr harina MIX DOLCI Schär
- 75 ml leche (o bebida vegetal o agua)
- 1 sobre de gasificante y acidulante de Mercadona
- 2 huevos de codorniz
- una cucharadita de canela (opcional)
- 2 cucharadas de postre de azúcar
- aceite

PREPARACIÓN:

- Batir los huevos y añadir la leche mezclar.
- En otro bol mezclar la harina con los sobres de gasificante, la canela y el azúcar. Meclar y tamizar sobre la mezcla anterior. Volver a remover.
- Dejar reposar la mezcla tapada entre 10 a 30 minutos.
- Echar aceite en una sartén antiadherente y cuando esté caliente añadir la mezcla. Dejar cuajar y dorar y dar la vuelta para que se haga por el otro lado.
- Servir acompañado al gusto: miel, nueces, fruta,...

I cannot find on shops the Orgran Pancake mix I have posted , so I decide to try a homede pancake mix. I have to say that the first receipe was not really good but at the second try I have a really good pancake mix. Here I leave you, so you can prepare at home this delicious pancake version. 

In my case I usually prepare only for me so I have adapted the receipe to make 1 pancake. If yo want more you can calculeted to doble the quantities. For two pancakes you can add a normal egg. About the flour, the mix I prefered to us in this receipe is the mix C Schär, but probably the mixture of rice flour and cornstarch , fhalf and half, can also be good. 




If you prepare too much pancakes they can be reheated in the microwave when you need them.

INGREDIENTS: (for one pancake)

- 75 gr flour MIX DOLCI Schär
- 75 ml milk (or vegetable drink or water)
- 1 out of gasifying and acidulant Mercadona
- 2 quail eggs
- A teaspoon of cinnamon (optional)
- 2 tablespoons of sugar
- Oil

PREPARATION:

- Beat the eggs and add the milk and  mix again.
- In another bowl mix the flour with leavening envelopes, cinnamon and sugar. Mix and sift over the mixture of step one. Stir again.
- Leave rest covered between 10 to 30 minutes.
- Pour oil in a nonstick pan and when is hot add the mixture. Leave to set and brown and turn around so that it cooks for the other side.
- Ready to enjoy, just add honey, nuts, fruit,...

Tortitas de manzana y canela / Apple & cinnamon pancakes

Me regalaron hace poco un preparado para tortitas de la marca Orgran que tenia en la despensa pendiente de probar. Hoy para desayunar me apetecía variar y probar los clásicos pancakes americanos y me he puesto manos a la obra. Aunque es un sabor y textura al que en España no estamos muy acostumbrados, puedo decir que me han sorprendido de forma positiva. Están buenas y cada uno puede acompañarlas según sus gustos. La mía llevaba miel, nueves y trocitos de plátano. Rico, rico!

A modo de indicación deciros que con medio paquete salen unas 3-4 tortitas. El resto se puede guardar sin problemas. Y en el envase tenéis indicado el paso a paso para su preparación.  Es muy rápido así que incluso para los que van con prisas por las mañanas pueden darse el capricho, y la mezcla de harinas ya viene preparada, así que resulta muy cómodo. Aquí va la foto.



INGREDIENTES:

-1/2 paquete de pancake mix de Orgran
- 1 huevo
- 200 ml de leche ( o agua)
- Miel, nueces, plátano,..
-3-4 cucharaditas de aceite

PREPARACIÓN:

- En un bol mezclar el contenido de medio paquete del pancake mix, los huevos y la leche. Remover bien.

- Calentar una sartén con una cucharadita de aceite y añadir 1/3 parte de la mezcla. Dejar que se cuaje y dore y dar la vuelta con cuidado para dorar el otro lado. Sacar y reservar en un plato. Ir haciendo el mismo procedimiento para el resto de la mezcla. Os saldrán entre 3 y 4 tortitas dependiendo del grosor que las queráis. (Si hacéis el paquete entero ( unas 6-8 tortitas) añadir un huevo más y otros 200 ml de leche o agua)

- Servir caliente y acompañar con miel, nueces, fruta, o incluso con una bola de helado en la merienda.

Someone brings me a prepared pancake mix from Orgran I had in the pantry waintng for the test. Today for breakfast I wanted to try the classic American breakfast  so I start cooking. I have never try the pancakes before, so I cannot tell you if the glutenfree version is differentt from the normal ones. But I can say that it surprised me positively. They're really good and everyone can add the topping that prefers. In my case I add honey, nuts and banana. Yum, yum!

As an indication I tell you that with a half package you can prepare about 3-4 pancakes. The rest of the package can be saved without problems. You have indicated on the product the steps for the preparation. It is very fast so even for those who are in a hurry on morning can try it. Here is the picture.


 INGREDIENTS:

- 1/2 package of pancake mix Orgran
- 1 egg
- 200 ml of milk (or water)
- Honey, nuts, bananas, ..
- 3-4 spoons of oil

PREPARATION:

- In a bowl mix the content of half package of pancake mix, the egg and the milk. Stir very well.

- Heat a pan with a spoon of oil and add 1/3 of the mixture. Allowed to toast and turn carefully to brown the other side. Remove and reserve. Do the same procedure for the rest of the mixture.Yo can do between 3 and 4 pancakes depending on the thickness pancakes that you want. (If you do the whole package (6-8 pancakes) add one more egg and 200 ml of milk or water)

- Serve hot and add the topping you most like honey, nuts, fruit, jam or even a scoop of ice cream! Enjoy it!

Coca de llardons / Sant John's Eve cake

El 24 de junio en España se celebra San Juan, la noche previa al dia festivo es costumbre, sobretodo en las zonas de costa, celebrarlo con petardos, cava y coca de San Juan. Hay varios tipos de cocas según nuestros gustos, yo para este año me he decidido por la Coca de Llardons (chicharrones).

Después de probar algunas cocas sin gluten, que dejaban mucho que desear, me desanimé y pensé quedarme sin coca un año más. Una amiga a la que también le apetecía tener este año su coca SIN GLUTEN me animó a intentarlo juntas y el resultado excelente! Hay que decir que usamos la masa de hojaldre ya hecha con lo que te ahorras mucho trabajo. Ahí van los ingredientes y el paso a paso. Todavía no hay foto porque desapareció de lo buena que estaba. :) En cuanto tenga la Coca de Llardons definitiva os la enseño.



INGREDIENTES:

- 2 masas de hojaldre
- 100 gramos de chicharrones (llardons)
- 80 gramos de azúcar aprox.
- 100 gramos de piñones aprox.
- 1 huevo (opcional)
- un poco de harina sin gluten

PREPARACIÓN:

- Estirar el hojaldre en una superficie enharinada previamente o en una hoja de papel de hornear.

- Picar los llardons en la picadora hasta que queden desmenuzados. Añadir la mitad de los llardons sobre la masa de hojaldre y encima colocar la segunda capa de hojaldre. Estirar con un rodillo hasta integrar las dos capas de hojaldre con los llardons.

- Colocar el resto de llardons en la superficie del hojaldre. Doblar la coca desde de los laterales hacia el centro y volver a aplanar con el rodillo para integrar de nuevo los llardons. Repetir la operación una vez más con cuidado de no romper el hojaldre.

- La masa debe quedar una lámina bien finita. Si vemos que se nos engancha la masa añadir un poco de harina al rodillo y a la superficie del hojaldre.

- Pintar la superficie con un huevo batido. Añadir los piñones bien repartidos sobre la superficie y el azúcar.

-Introducir al horno precalentado a 170 grados arriba y abajo en una altura media. Dejar durante 20-25 minutos. Si queremos la coca dorada en la superficie, encender el grill los últimos 5 minutos, vigilar que no se quemen los piñones.

- Sacar del horno, dejar enfriar y ya tenemos coca lista para la verbena. Al día siguiente queda igual de buena, con lo que la pódeis preparar el dia anterior.

On June 24 is the San Juan's festivity in Spain. We celebrate the eve of San Juan, specially in the beach areas, with fireworks, champagne and an special sweet cake called Coca de San Juan. There are several types of cake according to our tastes, this year I've decided the Coca de llardons (pork rinds).


After trying few gluten free similar cakes, which are not really good, I was discouraged and thought about an another Sant Juan eve without sweet cake. A friend who also wanted to have this year their GLUTEN FREE  CAKE encouraged me to try together with an excellent result! Note that we use the ready-made puff pastry so that it saves a lot of work. There go the ingredients and step by step. There are no photos because it disappeared so fast. :) Once I have the final Coca of llardons ready I promise to show it.




INGREDIENTS:

- 2 masses of puff pastry
- 100 grams of chicharrones (pork rind)
- 80 grams of sugar approx.
- 100 grams of pine nuts approx.
- 1 egg (optional)
- Gluten free flour

PREPARATION:

- Roll out the pastry on a sheet of baking paper surface.

- Chop the pork rinds until they are shredded. Add the half part of the pork rind on the puff pastry and place over the second layer of puff pastry. Roll out with a rolling pin to integrate the two layers of pastry with the pork rind.

- Place the remaining llardons on the surface of the pastry. Fold the cake from the sides to the center and back with roller flattening to integrate llardons again. Repeat once again being careful not to break the pastry.

- The mass should be very thin. Use a little of flour if you need to roll the pastry.

- Paint the surface with beaten egg. Add the pine nuts and the sugar well distributed over the surface.

-Enter on a preheated oven at 170 degrees up and down at an average height. Leave for 20-25 minutes. If we want turn on the grill the last 5 minutes, in this case, take care the pine nuts do not burn.

- Remove from oven, let cool and we have cake ready for the eve. You can prepare the previous day because it will be good also for the day before.

Nutri Free

Hace unos días asistí a una cata de una marca italiana Nutri Free que cuenta con más de 60 referencias de productos sin gluten.  A partir del próximo mes de septiembre es muy posible que ya podamos empezar a encontrar algunos de sus productos en España.

Personalmente tengo que decir que algunos pan, galletas y grissinis que pude probar, me parecieron unos productos excelentes con muy buen sabor y muy bien conseguidos. Sobretodo para dar más variedad a la oferta actual. Faltará ver el precio con el que se comercialicen.... pero desde luego pienso que tendrán tanto éxito como en Italia.
Galletas multicerelaes. También sin lactosa.
Os dejo un par de fotos para que veáis el logotipo de la marca. Os dejo su link por si queréis consultar más sobre Nutri  Free (está en italiano). Y como curiosidad, si tenéis la suerte de viajar a Italia, hay que saber que allí los productos sin gluten se venden principalmente en farmacias; aunque también es posible encontrarlos en algunas tiendas especializadas en dietética.

Few days ago the italian bran Nutri Free invited to a tasting in Barcelona to test few products gluten free that they sold in Italy. On their website you can find all the variety, about 60 products references. Nutri Free website (in italian).




Pan tipo payés precocido y envasado en porciones individuales. 
In my opinion, the products I could try, like bread, cookies and grissinis are excellent. They have very good taste and offer more variety to the current offer. We have to waint until september, here in Spain, to see them on our markets. And also we don't know about the price...but I think that Nutri Free could will be as successful as in Italy.

Tarta de manaza fina /Thin apple tart

Finalmente me he animado a hacer una receta que gusta a casi todos y que por su sencillez no se le resiste a nadie. Ideal para acompañar una merienda o desayuno, y también para sorprender como postre a nuestros invitados.

Para esta ocasión he decidido probar las láminas de masa brisa sin gluten que elabora ADPAN. Si sois más cocinitas podéis elaborar vuestra propia masa brisa, yo todavía tengo pendiente esa parte. Aquí os dejo los ingredientes que se necesitan y su preparación:



INGREDIENTES:

- 2 manzanas grandes o 3-4 pequeñas
- 1 lámina de masa brisa sin gluten
- el zumo de medio limón
- azúcar y canela al gusto

PREPARACIÓN:

1) Encender el horno y precalentar a 200ºC (arriba y abajo).

2) Lavar  pelar y laminar las manzanas de forma fina. Rociar con zumo de limón y reservar.

3) Extender en una bandeja de horno la lámina de masa brisa con el papel de hornear que ya nos trae. Espolvorear azúcar, unas dos cucharaditas de postre y un a pizca de canela (si gusta).

4)Colocar las láminas de manzana hasta cubrir toda la superficie, dejando un par de centímetros de margen para poder voltear los bordes. Espolvorear con una cucharada de azúcar.

5) Introducir en el horno y dejar durante 30-40 minutos. Dejar enfriar preferiblemente sobre una rejilla.

Finally I have decided to try a recipe that almost everyone loves and that its really simple, also to beginners. An ideal option to accompany the breakfast or the snack, and also as a dessert to surprise our guests.

For this occasion I decided to try the receipe using the prepared pie crust of ADPAN. You can also prepare the pie crust yourself, I haven't done it yet so I cannot give you a good receipe. Here you have the ingredients you need and the steps to prepare the tart:



INGREDIENTS:

- 2 large apples or 3-4 small
- 1 sheet of pie crust without gluten
- Juice of half a lemon
- Sugar and cinnamon

PREPARATION:

1) Turn on the oven and preheat to 200 º C (up and down).

2) Wash and peel the apples into thin sheets. Drizzle with the lemon juice and reserve.

3) Spread on a baking sheet the pie crust with the baking paper already brings. Sprinkle sugar, about two tablespoons of dessert and a pinch of cinnamon (if you like cinnamon).

4) Place the apple slices to cover the entire surface, except a small margin for abour 1-2 cm that you have to tumble to cover the edge of the tart. Sprinkle with a tablespoon of sugar.

5) Place in the oven and let for 30-40 minutes. Preferably leave to cool on a rack ans enjoy!

Bizcocho de chocolate / Chocolate cake

Una idea deliciosa para acompañar una merienda, un desayuno y, porque no, decorado con un poco de gracia como pastel de cumpleaños para l@s amantes del chocolate...

Para la masa puede usarse una mezcla de harinas especial de repostería sin gluten o, como en mi caso que he utilizado 2 vasos de harina de arroz y un vaso de maizena. Una vez en el horno para saber si el bizcocho está listo basta con pinchar con un palillo y ver que salga seco. Si no habrá que dejarlo unos minutos más. 

Como variante puede cortarse el bizcocho por la mitad de forma horizontal y poner una capa de mermelada para dar un toque afrutado. En ese caso habrá que guardar el bizcocho en la nevera bien tapado.



INGREDIENTES:

- 3 huevos
- 1 yogur natural
- 2 vasos de yogur de azúcar integral
- 3 vasos de yogur de harina sin gluten
- 1/2 vaso de yogur de aceite de oliva suave
- 1/2 sobre de levadura en polvo
- 1 tableta de chocolate negro
- Unas gotas de anís o coñac
- Mermelada de fresa, albaricoque,...(opcional)
- Azúcar glas (opcional)

PREPARACIÓN:

- En un bol batir los huevos y el yogur. Añadir el azúcar, la harina y la levadura y seguir removiendo hasta que todos los ingredientes estén integrados.

- Rallar la mitad del chocolate lo más fino posible. Y añadir la mitad a la mezcla, el resto reservar. Añadir también el aceite, el anís o coñac y volver a batir durante unos 5 minutos.

- Extender la masa en el molde previamente untado con aceite y meter al horno en altura media durante 35-40 minutos a unos 170ºC.

- Dejar enfriar. Derretir la mitad de la tableta de chocolate restante al baño maria y verter la mezcla encima del pastel dejando que cubra toda la superficie. Dejar enfríar a temperatura ambiente y por último verter el resto de virutas de chocolate. Espolvorear un par de cucharadas de azúcar glas. Ya está listo para degustar!

- 3 eggs
- 1 plain yogurt
- 2 yogurt cups of cane sugar 
- 3 yogurt cups of gluten free flour
- 1/2 yogurt cup of olive oil
- 1/2 sachet of baking powder
- 1 tablet of dark chocolate
- A few drops of anise or cognac
- Strawberry Jam, Apricot , ... (optional)
- Icing sugar (optional)

PREPARATION:

- In a bowl beat the eggs and the yogurt. Add the sugar, the flour and the baking powder and continue stirring until all ingredients are integrated.

- Grate half the chocolate as finely as possible. And add half to the mixture and reserve the rest. Add the oil, the anise or the cognac and beat again for about 5 minutes.

- Spread the dough in pan greased with oil and place in the oven on medium high for 35-40 minutes at about 170 ° C.

- Allow to cool. Melt the half remaining chocolate tablet and pour the mixture over the cake letting it cover the entire surface. Let cool to room temperature and finally pour the remaining chocolate chips. Sprinkle a couple of tablespoons of icing sugar. You are ready to enjoy!

Granola

Los celiacos de España tenemos bastantes problemas para encontrar un surtido de cereales variado. Es cierto que cada vez hay más variedades, y el tema está en auge pero aún así se hecha mucho de menos la riquísima GRANOLA; mezcla de copos de cereales crujientes con miel, frutos secos, chocolate, etc, para acompañar al yogur, leche,...

Hace poco encontré una marca francesa que se encontraba en España pero ha dejado de venderse. Así que tras navegar un poco y buscar ingredientes necesarios aquí os deja está sencillísima receta que os saldrá bien a la primera. Suerte y por supuesto, adaptad los ingredientes a vuestro gusto.



INGREDIENTES:

- 200 gramos copos de trigo sarraceno (SIN GLUTEN)
- 8 cucharadas soperas de miel
- 30 gramos de mijo inflado
- 150 gramos de almendras ya peladas
- 1/4 cucharadita de canela molida (opcional)
- 1/4 de cucharadita de extracto de vainilla (opcional)
- Frutos secos, dátiles, chocolate, fruta desecada,...

PREPARACIÓN:

- Con una picadora moler las almendras hasta conseguir la crema de almendras, una especie de pasta que podrías usar para untar.

- Mezclar la miel con la canela y la vainilla y remover bien. Añadir la crema de almendras del punto anterior y volver a mezclar todo.

- Añadir poco a poco los copos de trigo sarraceno e ir mezclando, añadir también los copos de mijo inflado y el resto de ingredientes elegidos. Acabar de mezclar bien con las manos bien limpias. Extender la mezcla en una bandeja de horno bien esparcida por toda la superfície de la bandeja.

- Encender al horno a 170 ºC y cuando llegue a la temperatura introducir la bandeja a altura media por 15 minutos. Abrir el horno y remover la mecla. Dejar hornear por otros 15 minutos aproximadamente.

- Sacar del horno, dejar enfríar y guardar en botes de cristal herméticos. Se conserva durante unos 3 meses sin necesidad de frigorífico.

In Spain we have trouble finding a varied assortment of cereals gluten free. It is true that everyday the offer is growing with more varieties. But there are not varieties of GRANOLA; mixture of crunchy cereal flakes with honey, nuts, chocolate, etc., to add into the yogurt, the milk, ... 

I recently found a French brand that was in Spain but no longer sold. So after a little browse and search I leaves you the ingredients that we needto prepare this simple recipe. Good luck and of course add the ingredients that your prefer.


INGREDIENTS:

- 200 gr of buckwheat flakes ( GLUTEN FREE )
- 8 tablespoons of honey
- 30 gr of puffed millet
- 150 gr of peeled almonds (or almond cream)
- 1/4 teaspoon ground cinnamon (optional )
- 1/ 4 teaspoon vanilla extract (optional )
- Nuts , dates, chocolate, dried fruit, ...

PREPARATION:

- In a blender grind the almonds until obtain an almond cream, a paste that you could use to spread. If you have it prepared at home just omit this step.

- Mix in a bowl the honey with the cinnamon and the vanilla and stir well . Add the almond cream from the previous point and mix everything.

- Gradually add buckwheat flakes and mix again, add also puffed millet flakes and other ingredients chosen . Finish mix well with the clean hands. Spread the mixture on a baking tray well spread across the surface of the tray.

- Turn on the oven at 170 ° C and when the temperature reaches Push the tray half way up for 15 minutes. Open the oven and remove the mixture. Let bake for another 15 minutes approximately.

Yogurt con yogurtera / Yogurt with yogurt machine

Después de tres años del diagnóstico de la celíaquia y la intolerancia a la lactosa vuelvo a intentar reintroducir la lactosa poco a poco, por supuesto, y está vez con resultado positivo!!!! Un trocito de queso semi curado, un poco de yogur, hasta algo de leche... para algun@s paracerá una tontería pero para los que vivimos rodeados de limitacion por alergias e intolerancias es una grandísima noticia.

Así que sin pensármelo dos veces, he adoptado una yogurtera con la que preparar un delicioso yogur ecológico en casa. Digo adoptado porque la máquina tiene sus años como veréis en la foto pero funciona perfectamente. Tiene capacidad para 6 yogures. El yogur que obtenemos es mucho más económico, además se puede preparar ecológico y queda buenísimo. Aquí os dejo los ingredientes que necesitamos.





INGREDIENTES:

- Leche entera  (mejor ecológica)
- Un yogur natural
- Una yogurtera


PREPARACIÓN:

- Verter una cucharadita de yogurt en cada vaso de yogurt.

- Calentar la leche (unos 750 ml en mi caso) a unos 40 grados de temperatura. Rellenar los vasos de yogurt y remover muy bien para que quede una mezcla homogénea.

- Poner los vasos de yogurt en la yogurtera y dejar encendida unas 10 horas aproximadamente. Apagar la yogurtera y poner en la nevera para parar la fermentación.

- Estarán listos para tomar pasadas 4 horas en el frigorífico! Añádeles lo que te apetezca: azúcar, miel, mermelada, cereales.

* Se puede añadir un par de cucharada de leche en polvo para dar más consistencia al yogur. Es recomendable sobretodo si lo preparamos con leche semidesnatada o desnatada.

So, without thinking twice , I have adopted a yogurt machine to prepare a delicious organic yogurt at home. I write adopted because the machine is not new but it works perfectly It can prepare 6 yogurts each time. The yogurt that we obtain is much cheaper and with a really good taste.  Preparing our own yogurt we can help to reduce the plastic!  Here you have what we need.



INGREDIENTS:

- Whole milk (better organic)
- A natural yogurt 
- A yogurt machine


PREPARATION:

- Pour a teaspoon of yogurt in each cup of yogurt .

- Heat the milk, about 750 ml in my case, about 40 degree (not more). Fill the cups of yogurt and stir well.

- Put the cups in the yogurt machine and let lit about 10 hours. Turn off the yogurt machine and put the cups coveres in the fridge to stop the fermentation.

- They'll be ready to take after 4 hours in the fridge! Add whatever you like: sugar, honey, jam , cereals, nuts,...

* You can add two tablespoons of powdered milk to give more consistency to the yogurt . It is recommended especially if you are preparing the receipe with skimmed milk.

Mermelada de melocotón / Peach jam

Hace algunos meses me regalaron una cantidad considerable de melocotones. Demasiados para comer antes de que se estropearan. Así que para evitar tener que tirarlos y poder disfrutarlos durante los meses de otoño y invierno utilice la técnica de conservar con azúcar. El resultado es una deliciosa mermelada de melocotón casera.

Calcular la cantidad de azúcar: En casa no nos gusta la mermelada demasiado dulce así que eché poca cantidad de azúcar. Además también pensamos consumirla en poco tiempo por lo que no necesito que se conserve más de 4-6 meses. Si preferís más dulce podéis echar hasta 400 gramos de azúcar por quilo de fruta. Y si queréis conservarla más tiempo se puede incrementar hasta 600 o 700 gramos de azúcar por quilo.



Aquí os dejo los ingredientes y alguna foto para que veáis el resultado.

INGREDIENTES:

- 1 kg de melocotones
- 250 gr de azúcar
- El zumo de medio limón

PREPARACIÓN:

- Lavar con agua los melocotones. Pelar y deshuesar. Eliminar si tienen partes dañadas. Cortar en trozos medianos y pesar para calcular el azúcar.

- Poner en una olla junto con el azúcar y el zumo de limón. Dejar reposar mínimo dos horas.

- Poner la olla a hervir a fuego suave durante unos 40 minutos aproximadamente removiendo de vez en cuando. Cuando se haya reducido el líquido chafar con el tenedor los trozos de melocotón hasta encontrar la textura deseada. A mi me gusta con trocitos pero si lo preferís más fino se puede pasar por el miniprimer.

- Esterilizar los botes de vidrio y las tapas. Llenar los botes con la mermelada caliente, tapar y dejar enfriar boca abajo. Una vez abierto el bote debe conservarse en el frigorífico.

A few months ago reaches to me a considerable amount of peaches. Too much quantity for eat before damage, so I think on the the ancient receipe to preserve with sugar. I prepare a delicious homemade peach jam so I will enjoy it during the autumn and winter months. Here you have the ingredients and a photo so you can see the result.

Calculate the amount of sugar: At home we do not like the jam too sweet so I took a small amount of sugar. In addition we calcule that we will consume it in a short period, about 4-6 months. If you prefer sweeter you can add up to 400 grams of sugar into a quilo of fruit. And if you want to preserve the jam more time you can increased tha quantity of sugar to 600 or 700 grams for each quilo.




INGREDIENTS:

- 1 quilo of peaches
- 250 grams of sugar
- Juice of half lemon

PREPARATION:

- Wash with peaches. Peel and take out the pip. Leave if you have damaged parts. Cut into medium pieces and weighed to calculate the sugar.

- Put in a saucepan with the sugar and lemon juice. Let stand at least two hours.

- Bring the pot to boil for about 40 minutes, stirring occasionally. When the liquid has reduced take a fork and smash until you find the desired texture. I like small pieces in the jam but if you prefer thinner can go through the grinder machine.

- Sterilize glass jars and lids. Fill jars with hot jam, cover and let cool upside down. Enjoy it an remember to keep in the fridge once open.

Arroz con bacalao y verduras / Rice with cod and vegetables

Una receta de mamá que vale la pena compartir por lo nutritiva y rica que está. Los celíacos tenemos más que asumido que el arroz es nuestro cereal por excelencia, aparte del dichoso maíz que encontramos en todos los productos envasados, así que nada mejor que ir apuntando variantes para sorprender y sorprendernos cada día de la mesa. Dicen que "en la variedad está el gusto".

El bacalao salado es muy versátil y nos permite conservar el pescado el tiempo que necesitemos hasta su uso. Antes de cocinarlo necesita desalarse sumergiéndolo en agua durante unas 48 horas y cambiando el agua unas 2 o 3 veces al día, dependiendo de nuestras preferencias por el gusto salado y nuestra tensión. También puede prepararse esta receta con bacalao fresco.



INGREDIENTES: (3-4 personas)

-  3-4 tazas de arroz blanco
- Un lomo grande de bacalao desalado
- 2-3 alcachofas
- Medio manojo de ajos tiernos
- Medio manojo de espárragos
- Azafrán en rama
- 3-4 cucharadas soperas de aceite
- Sal (al gusto)

PREPARACIÓN:

- Pelar las alcachofas y cortarlas en medias lunas finas. Lavar los esparrágos, quitar la parte dura y cortar en trozos pequeños. Sofréir a fuego lento en una sartén con un poco de aceite durante 8-10 minutos.
Pelar los ajos tiernos y cortar en trozos como los espárragos y poner a fréir con el resto de verduras.

- Quitar la piel al bacalao y cortar en dados de tamaño mediano. Añadir junto con las verduras e ir removiendo todo dejando que se rehogue  el bacalao. Unos 5 minutos. Salzonar a gusto y añadir unas hebras de azafran en rama. Sacar del fuego y reservar en la misma sartén.

- En una cazuela aparte calentar agua y cuando empiece a hervir echar el arroz y dejar cocer durante 12 minutos. Pasado este tiempo verter en la sartén con el bacalao y las verduras y remover. Dejar que siga hirviendo unos 5  minutos más. Se puede añadir un poco más de agua si fuera necesario.

- Apagar el fuego, dejar reposar un par de minutos y listo para servir.

Salted codfish is a very versatile aliment and allows us to preserve the fish long time. Before cooking it needs to be desalted by immersing in water for 48 hours changing the water about 2 or 3 times a day, depending on our preferences for salty taste and our tension. You can also try this receipe with fresh cod.




INGREDIENTS: (3-4 people)

- 3-4 cups of white rice
- A large desalted cod loin
- 2-3 artichokes
- Half bunch of asparagus
- Saffron sticks
- 3-4 tablespoons tablespoons oil
- Salt (optional)

PREPARATION:

- Peel the artichokes and cut into thin half moons. Wash the asparagus, remove the hard part and cut into small pieces. Saute over low heat in a pan with a little oil for 8-10 minutes.

- Remove the cod skin and cut up into medium-small pieces. Add with the vegetables and cook all for about 5-7 minuts. Taste to salt if necessary and add a few strands of saffron sticks. Remove from the  heat and reserve in the same pan.

- In a separate saucepan heat water and when it starts boiling add the rice and cook for  about 12 minutes. After this time, pour the rice and water into the pan with the cod and the vegetables and stir. Let continue to boil for about 5-7 minutes. You can add a little more water if necessary.

- Turn off the heat and it is ready to serve.

Sopa de cebolla / Onion's soup

En días de frío nada mejor que una reconfortante sopa caliente a mediodía o para la cena. Hoy os traigo la versión de sopa de cebolla que probé en un restaurante de Barcelona, El Racó Ecològic, hace unas semanas y me sorprendió tanto por  rica que estaba. Como la receta en sí es bastante sencilla me he animado a hacer la versión casera y compartirla con vosotros. Espero que os animéis a probarla, vale la pena.



INGREDIENTES: (2-3 personas)

- 1 cebolla grande o dos medianas
- 4 cucharadas soperas de aceite
- 1 cucharada de postre de Ghee
- 500 ml agua o caldo
- Medio vasito de vino blanco
- Sal (al gusto)
- Pan tostado (ex: Beiker)
- Egg (optional)

PREPARACIÓN:

- Pelar y picar la cebolla en juliana, cortes alargados.

- Derretir el ghee junto con el aceite de oliva en una cazuela mediana. Agregar la cebolla picada y dejar a fuego lento unos 10 minutos para que se dore. Veréis que adquiere un color tostadito.

- Agregar el vino y la sal y dejar cocer hasta que se evapore el líquido (alcohol).

- Añadir el agua o caldo y dejar tapado durante unos 20-25 minutos. Si véis que se queda con poco caldo podéis añadir un poco más, según la textura deseada.

- A la hora de servir se acompaña de pan tostado y los más atrevidos pueden echar un huevo cuando el caldo esté muy muy caliente y quedará semi pochadito.

- A disfrutar de la rica sopa!

During winter days nothing better than a soup to recuperate the energies during the day or before going to sleep at nigth. Today I bring you the version of onion soup. I taste few weeks ago in a restaurant of Barcelona and I was so surprised it tastes amazing. As the recipe itself is quite simple I have decided to make my own version at home and share it with you . I hope you feel encouraged to try it.


INGREDIENTS: (2-3 people)

- 1 large onion or two medium
- 4-5 tablespoons tablespoons oil
- Ghee (the size of an ice cube)
- 500 ml water or broth
- Half glass of white wine
- Salt (to taste)
- Toast (ex : Beiker)
- Egg (optional)

PREPARATION:

- Peel and chop the onion into strips, elongated cuts.


- Melt the ghee with the olive oil in a medium pot. Add the chopped onion and simmer about 10 minutes to brown. You will see that acquires a golden brown color.

- Add the wine and salt and cook until the liquid (alcohol ) is evaporated.

- Add water or broth and boil covered for about 20-25 minutes. You can add more liquid depending on the desired texture.

- When serving you can accompanied by toasts or also an egg. Add th egg when the soup is very hot and will it adquiered a semi boiled texture.

- Enjoy the soup!

Galletas con chips de chocolate /Chocolate chip cookies

De nuevo de adentro en terrenos chocolateros para preparar las clásicas y deliciosas galletas con trocitos de chocolate negro. Imprescindibles para los amantes del chocolate!

Muy fáciles de preparar y con ingredientes sencillos! Si la cantidad indicada va a durar poco, como fue en mi caso, puedes duplicar las cantidades de la receta indicada. La inspiración la encontré en el blog celiaquines. Os animo a echarle un vistazo. Y aquí os dejo la adaptación a la versión sin lactosa.



INGREDIENTES: (unas 15-20 galletas)

- 150 gr de harina (125 preparado panificable y 25 arroz)
- 50 gr azúcar moreno
- 30 gr azúcar seintegral o blanco
- 80 gr pepitas de chocolate negro (o tableta troceada)
- 50 gr ghee (o margarina)
- 1 huevo
- 40 gr de nueces picadas (yo usé nueces de macadamia)
- 1/2 cucharadita de goma xantana (opcional)
- 4-5 cucharadas soperas de leche vegetal o leche sin lactosa

PREPARACIÓN:

- Se recomienda usar todos los ingredientes a temperatura ambiente para una mejor mezclar.

- En un bol mezclar el ghee con el azúcar moreno y semiintegral. Trabajar la masa hasta que esté bien integrado. Añadir el huevo y seguir batiendo.

- Ir añadiendo la harina mezclada con la goma xantana poco a poco sin dejar de remover. Cuando esté bien removiendo, la masa queda bastante pegajosa. Añadir las nueces troceadas y mezclar.

- Por último añadir las chips de chocolate y volver a mezclar la masa.

- Encender el horno a 180ºC arriba y abajo. En una bandeja de horno poner papel vegetal en el fondo e ir añadiendo porciones de la masa del tamaño de una nuez más o menos. Aplastarlas un poco para alisarlas.

- Dejarlas hornear durante 15-18 minutos. Sacar del horno y dejar enfriar. Listas para disfrutar.

Again I bring you a chocolate classic receipe. The delicious chocolate chip cookies. Essential for the chocolate lovers!

Very easy to prepare with simple ingredients! If the amount shown is not going to be enough, as it happensin my case, you can double the amounts of the indicated ingredients. I found inspiration in the celiaquines blog. I encourage you to take a look, it's only in Spanish... And here I leave the adaptation of the receipte to the lactose free version.


INGREDIENTS: ( 15-20 cookies)

- 150 gr of flour ( 125 breadmaking prepared and 25 of rice)
- 50 gr brown sugar
- 30 gr white sugar
- 80 gr black nuggets of chocolate ( or a chopped tablet)
- 50 gr ghee ( or margarine)
- 1 egg
- 40 gr of chopped nuts (I used macadamia nuts)
- 1/ 2 teaspoon xanthan gum (optional )
- 4-5 tablespoons of vegetable milk or lactose free milk

PREPARATION:

- It is recommended that all ingredients at room temperature for better mixing.

- In a bowl mix the ghee with brown sugar and white sugar. Remove the dough until it is well integrated. Add the egg and continue beating .

- Go adding flour mixed with xanthan gum slowly while stirring. When thoroughly stirring, the dough is quite stick . Add chopped walnuts and mix again.

- Finally add the chocolate chips and mix the dough.

- Preheat oven to 180 ° C above and below. In a baking tray put baking paper on the bottom and adding lots of dough the size of a walnut moreless. Flatten slightly to flatten.

- Let them bake for 15-18 minutes . Remove from oven and let cool. Ready to enjoy.
